would i get bitten by a snake during a run.  not poisonous, but it hurts like a bitch and earned a trip to the emergency room.  right on my achilles tendon.  apparently i’m out for two weeks of running time before my half…which will really hurt me.  i guess i should welcome myself to two weeks of excessive strength training and low-cal eating!

pinterest recipe of the day: imitation is the sincerest form of flattery

if you love food like i do, this picture will be instantly recognizable.  yes.  the legend.  THE strawberry chicken poppyseed salad from panera.  and for dinner tonight are some easy directions to make an EXACT copycat that’s just as good if not better.  if you’re veg, sub out the chicken for some tofu or tempeh with a little seasoning and you’re good to go.

  • one bag of your choice of mixed greens.  panera just uses a plain iceberg blend, but i’ve tried spinach as well and it is divine.
  • three white meat chicken breasts (or three cups of tofu/tempeh) —if you are a carnivore, avoid perdue or tyson products and go for free range.  i will touch on this later.
  • 1/2 c of whole walnuts
  • 2 c of strawberries
  • 1 c of mandarin oranges
  • 2 c of pineapple chunks
  • 1&1/2 cup of blueberries
  • however much and whatever kind of dressing you prefer, but BE CAREFUL with how much you dump on.  i prefer not to use dressing because it’s shitty for you and the fruit more than makes up for the lack of oil and is packed with flavor.  any grocery store sells a good poppyseed dressing like panera’s, but i also like a plain balsamic viniagrette.  trader joe’s also sells a pretty mean lemon poppyseed dressing that is very light and low cal.

the amount of fruit you use is also up to you.  above is what i typically use, but by all means, modify according to what you enjoy.

  • after washing your greens and fruits (‘organic’ doesn’t mean much these days-don’t feed yourself pesticides!), dump all of your greens into a large mixing bowl.
  • on a cutting board, remove the tops of your strawberries and cut each berry vertically as to create a bunch of thin slices from top to bottom.
  • toss your strawberries, blueberries, mandarin oranges, pineapple, and walnuts in with your greens.
  • if you are using meat products, simply cooking it through is adequate.  no seasoning is required.  if you are using alternative meat products, you may want to brush a bit of red pepper mixed in with a little olive oil to give a bit more ‘meaty’ flavor.
  • toss, and add dressing!  SO EASY.

there you have it.  it’s not rocket science.  but it IS damn good.  enjoy!

Anonymous: i can't do the push ups!! ah this makes me upsett. :(

DON’T be upset!  i have been in shape for about a year now and ONLY at the beginning of THIS summer could i do more than 20 at a time—just because pushups are difficult for you does NOT mean you are a failure.  it just means you need to work on your arms!  pushups are a full body workout, so DUH they’re hard.  just keep working at it.  it may be hard at first, but i promise, it gets easier.  if workouts i post are too challenging, don’t be afraid to modify!  do what works best for YOU, but remember that you are stronger than you think so always push a little above and beyond!

guys, i have an announcement

i know, i haven’t posted in forever.  i’ve been on vacation.  i go on vacation a lot.  but rest assured, i worked my ass off every single day but friday.

SO HERE’S MY NEWS: i’m running a half marathon in november.  13.1 miles.  i can do it.  and so can you!
